Monday Morning Confessins

Holy cannoli! Where has this week gone??? Sorry for the silence but between school, work and all the little things that came up this week, I had no time to blog! Ok, here goes:

  • Thanksgiving in this week!!!! It's 3 days from now, 3 DAYS!!! I can't even wait!
  • I ordered Christmas cards from snapfish.com. They were 60% off! Go check out the site for other deals, they had a bunch of great sales!
  • My step-brother Trent moved in with us this weekend. He'll be with us until May when he graduates from ASU. It should be a lot of fun!
  • My sister Keely had a dance recital this week, her dance was a glow in the dark dance- it was the coolest dance of the evening!
  • My little brother Jaeden had his first band concert this week as well! It was the cutest thing! He plays trumpet and he is loving it! Throughout the concert you could hear squeaks and kids out of tune with poor tone... I loved it! Gotta love 5th and 6th grade band! :)
  • My friend Julie shared this on Facebook. It's birthday card for a "special Aunt". I'm thinking they should have used a different font...

Monday Morning Confessions

Good morning and happy Monday to you all! Hope you had a wonderful weekend!

  • First off, HAPPY BIRTHDAY DAD! Hope you have a great day today!
  • Today marks the last day of my third week in class and there is good news! I am going to survive! Phew... I got my big paper done (two weeks early I might add...) and it's all down hill from here! Thank god!
  • Ok, now seriously, Drew and I are actually going to work on the yard today. No really, I swear! Cross my heart, it's actually going to happen... Right after we go to the bank to change my name!
  • I didn't get around to making the bucket list last week, I almost didn't have the chance to breathe last week we were so busy! But hopefully this week! I've been thinking about what I want to include and a trip to the Macy's Thanksgiving Day Parade is definitely going on there! Any other ideas?
  • Last night I sat down and made a bunch of goals for myself. At work they tell us that goals should be S.M.A.R.T. Specific, measurable, attainable, realistic and time bound. I tried to set all of my goals according to this. I think that this time of year is a good time for self reflection so I'm really going to make it a priority to meet my personal goals! Someone in class said she writes down her goals and hangs them in a place where she sees them everyday to help motivate her, that sounds like a good idea to me!
  • Can you believe they started playing Christmas music on the radio already??? UGH! Thanksgiving isn't for another week and a half!  Boo!
  • Drew and I will be attending our first concert together as a couple (only took us 6.5 years!!!) We're going to the Trans-Siberian Orchestra on December 1st! I'm so excited I could pee my pants! But I wont...
Aaaaaaaand that's all! I don't have much else today, I hardly got on Pinterest or Facebook at all this week thanks to homework! So, no fun video's or ecards to share. :(  Have a great Monday, more to come throughout the week!

Pumpkin Crunch

It just wouldn't be fall without a little pumpkin in our lives! Every year, around this time, most people are eating pumpkin pie or pecan pie... Not us! We eat pumpkin crunch! Let me tell you what, it like nothing you've ever tasted! I haven't met a person yet who didn't like this stuff! Even people who don't like pumpkin have told me they liked it! Don't believe me? Try it for yourself! :) I firmly believe that the person who came up with this recipe should win a Nobel Peace Prize, it's THAT good.

Ok, ok, anyway... If you like pumpkin you'll love pumpkin crunch. It is a little time consuming but well worth the effort! You can even make two at a time to make it worth while. I don't know where we got this recipe from, we've been making it for as long as I can remember. Get excited, because here it is:



Pumpkin Crunch
1 29oz can pumpkin
1 can evaporated milk
1 cup sugar
1/4 tsp. cinnamon
2 eggs
1 box yellow cake mix
2 sticks of butter

  • Preheat oven to 350F. Line a 9x13 pan with parchment paper.
  • Combine pumpkin, evaporated milk, sugar, cinnamon and eggs into a medium bowl and mix well. Pour into the pan on top of the parchment paper. Cut away excess paper.
  • Evenly sprinkle cake mix over the top of the pumpkin mix. Very gently press down on the cake mix with your hand to level it and pack it. Melt the butter and slowly pour over the cake mix, making sure to cover as much as possible. If there are any large uncovered spots, use a fork or spoon to move the butter around.
  • Bake for 50-55 minutes until golden brown. When it's done baking, pull it out of the oven and allow it to cool at room temperature for 15 minutes.
  • Take a cookie sheet and place it on top of the 9x13 pan. Hold the pan and cookie sheet together and flip so the pumpkin crunch is now on the cookie sheet with the cake mix/butter crust on the bottom.  (*Do not try to flip the pan onto the cookie sheet while the cookie sheet is on the counter, it will splatter everywhere and be ruined!) Remove parchment paper and store in the fridge until completely cooled.

Frosting
8oz cream cheese
1/2 cup powdered sugar
1/2 tub whipped cream
1 tsp. vanilla
cinnamon sugar to sprinkle
  • Cream together cream cheese, vanilla and powdered sugar. Gently fold in whipped cream.
  • Frost the top of the pumpkin crunch. Sprinkle cinnamon sugar on top.

Menu Planner

2 weeks. Thanksgiving is in 2 WEEKS! Let me ask you a question... WHERE DID 2013 GO??? This year has flown by! I am very thankful that it is November, however, because that means the weather in Phoenix should cool down any day now! We are at least out of triple digits but c'mon, what's a girl gotta do to get some 60's and 70's over here?!

This week I decided it was time for a menu board facelift. My old menu board was created using small clothes pins that went down the left side of the frame. Each clothes pin was labeled with a letter to represent a day of the week and then you clip a slip of paper with a meal on it so you know what you are making each day! On the right side were pockets to store the slips of paper in, organized by main dish and sides. We have used this almost every week since I made it a year and a half ago. The clothes pin thing was cute but became a pain in the butt trying to find tiny pieces of paper with the food I wanted so we resorted to using a dry erase marker. The clothes pins just looked silly after that so I decided to make a meal planner that was dry erase friendly! Here is the result:
Materials:
Frame - I used an 11" x 14"
Scrapbooking paper
Letter stickers
Double sided sticky tape
Paper cutter, or scissors as long as you cut straight
Anything else you would like to use to decorate with (buttons, ribbon, stamps, etc.)

Think about how you want the menu board to look. Play around with some ideas before using sticky tape or making any cuts. When you are ready, cut your paper to fit inside the frame. On the table, lay out your paper, letters and decorations where you want them, making adjustments as you see fit. Use tape to stick them down. When you are through sticking everything down, put the final product inside the frame and close up the back. VoilĂ !
For this particular menu planner I use shimmery white and blue paper. I cut little white strips to write the dinners over and I stuck them onto the blue with sticky tape. Then I added my sparkly letters and put the whole thing in the frame. This probably took me about 15 minutes to make, it's super quick and I love it! Eventually I'd like to get a magnet to put behind the blue paper on the right side so I can stick refrigerator note pads on there for my grocery list. This will do for now. :)


Also, I'm sure some of you are wondering what "YOYO" means... It stands for "You're On Your Own." :) We do this on the nights that we won't be together for dinner.

Monday Morning Confessions

Good morning and happy Monday to you all! Isn't it obnoxious how much I love Monday's? Don't worry, when you're all drinking you're coffee at home on Saturday morning, I'm at work longing for the end of the day so I can start my weekend! Anyway, lets get the week started off right with a
random Monday morning post! :)

  • Ever since we moved into the house I've wanted a mantel above my fireplace. To be honest, the main reason is so I can hang up stockings at Christmas! (remember last week how I said I live for the holidays? Case and point...). Our amazing family friends Kathy and Ken have offered to help us because our fireplace is unique in that the wall around it is round! Ken is wonderful at woodworking and is going to see what he can do for us! Of course, that is assuming the materials don't cost an arm and a leg!

  • #canwejusttalkabouthowannoyinghashtagsare???? Even commercials are using them now! I heard one on the radio the other day where people were talking back and forth in hash tags. UGH! #hashtagsaredumbstopusingthem!
  • The healthy eating isn't going well... I've been trying to pull it together but this ecard sums it up perfectly!
  • So those boots I mentioned last week. Yea... they don't fit. I'm SO BUMMED! It turns out they aren't exactly like the ones I tried on last year, I guess they will be going back. :( However, the good news is that the same day I got the boots I hit a HUGE sale and got a killer deal on bras! I can't even tell you how exciting that is because those puppies are expensive
  • I plan on making a new menu board this week, so look for the how-to post! With my current one, you are supposed to use clothes pins to hold the menu items in place. Well that went out the window a while ago and now we use white board markers so I'm changing to board to fit our style!
  • I also want to make a bucket list that I saw on Pinterest, stay tuned for that as well. :)
  • Have you seen the video where Jimmy Kimmel has parents tell their kids they ate their Halloween candy? Hilarious! I definitely want to do this to my kids. I know, I know, I'm a mean and terrible person.
  • I feel like Thanksgiving gets completely ignored this time of year! It seems like the stores, radio and TV go straight from Halloween to Christmas! Well, I think we should find more ways to celebrate Thanksgiving aside from eating twice our body weights in turkey, mashed potatoes and pumpkin pie. Everyone in the family writes what they are thankful for on the leaves and you attach them to the branches! I think I would fill the vase with acorns though!
  • Drew and I are planning on doing some work in the backyard this week. Hopefully we'll finish leveling the yard out so we'll be ready for the sprinkler system to go in!
  • Almost done with my second week of school and so far I have 100% in class! I will say, this week I want to pull my hair out much less! I think I just need to give myself some time to get back into the swing of things! I'm a little rusty from being out so long.
